Preheat the oven to 170°C, and grease an ovenproof dish with spray oil.
Heat the oil in a small fry pan on medium heat. Add in the leek and sauté for 2-3 minutes until softened.
In a large bowl whisk together the eggs and milk until just combined. Layer the thinly sliced Love Potatoes, alternating with the leek, in the greased ovenproof dish. Pour over the egg mixture and spoon the cottage cheese around the edges of the dish.
Bake in the oven for 20 minutes or until eggs is cooked on the top. Remove from oven and allow to cool for 2 minutes before serving.
